SHEET. PAN. MEALS. I must’ve been living under a f*cking rock, because I have no idea what took me so long to jump on the sheet-pan-meal band wagon. Since I’m always looking for new ways to save time in the kitchen, sheet pan meals have literally been my new BFF – and I think they’ll be yours, too! All you need to make this delicious and hassle-free dinner is one pan, 30 minutes, and a few budget-friendly ingredients … leaving you with more time to binge watch The Bachelor (is it just me or are the episodes getting longer and longer every season?!), or finish knitting that blanket you never got around to last Christmas., or just clean the damn house & get laundry folded because LIFE. Brace yourselves, because you’re not going to believe how easy it is to get these fajitas from the pan to your dinner table in just about 30 minutes. In just 4 simple steps, you’ve got a delicious and healthy meal that your whole family is sure to love – unless you don’t like mushrooms and in that case, we cannot be friends. Here’s how to make the best 30-Minute Vegan Sheet Pan Portobello Mushroom Fajitas:

  1. Make your fajita seasoning. The ingredients in this dish are minimal, so we really focus on the seasonings here! And because Fajitas are considered Tex-Mex rather than authentic Mexican cuisine, you can really modify the seasonings to your personal preferences. I like to use:
    • Smoked Paprika
    • Chipotle Chile Pepper Powder
    • Garlic Powder
    • Onion Powder
    • Cumin
    • Fresh Oregano
    • Fresh Lime Juice
    • Salt & Pepper
  2. Toss. Toss your mushrooms and veggies with a bit of avocado oil and fajitas seasoning. I like to use a big ass bowl and toss all my veggies by hand to ensure they’re all coated with with my fajita seasoning and fresh lime juice!
  3. Bake. After seasoning and tossing, your oven does all the work! Place your veggies on a parchment paper lined baking tray and bake at 425 degrees for 20-30 minutes. If you want a bit of extra char, you can broil them on high for 5 minutes as well!
  4. Assemble. After 20-30 minutes in the oven, your fajitas are ready to assemble!

So damn easy right?!?!

what do i serve with my fajitas?

I truly believe the less ingredients in this dish, the better. The flavor from the bell peppers, onions, jalapeños, and seasonings really come through after baking them all together! That being said, I love serving my fajitas in warm flour tortillas with some avocado, a squeeze of fresh lime juice, and fresh cilantro … super simple, but so good! You can also pair your fajitas with your favorite salsa, guacamole, and a dollop of plant-based sour cream!

I also love to use the fajita mix to make a fajita bowl! If you have leftovers for lunch the next day, I like to top my favorite lettuce with my fajita mix and toss with my favorite salad dressing or just some fresh squeezed lime!

Ingredients
  • 1 tsp each - smoked paprika, chipotle chile pepper powder, garlic powder, onion powder, cumin, and kosher salt
  • 1 TBS fresh oregano
  • ½ tsp fresh ground black pepper
  • 1 LB portobello mushrooms, stems and gills removed, sliced in about ½" thick slices
  • 1 small red bell pepper, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 small yellow bell pepper, thinly sliced
  • 1 small white onion, thinly sliced
  • 1 jalapeno, sliced
  • Flour tortillas, for serving
  • Fresh avocado, for serving
  • Lime wedges, for serving
  • Fresh Cilantro, for serving
Instructions
  1. Preheat oven to 425 degrees
  2. In small bowl combine smoked paprika, chipotle powder, garlic powder, onion powder, cumin, salt, pepper, and oregano. Mix to combine.
  3. In a large bowl toss sliced mushrooms, bell peppers, onions, and jalapeños with avocado oil, fresh lime juice, and seasoning mix. Transfer to a parchment paper lined baking tray. Bake on the middle rack of the oven until the vegetables and mushrooms and veggies are tender, tossing every 10 minutes or so, 20 to 30 minutes minutes. For extra char, broil on high for 5 more minutes.
  4. While the veggies are baking, heat tortillas and prepare toppings.
  5. Serve portobello fajita mix in warm flour tortillas. Finish with toppings of choice and enjoy!

  1. Don’t sleep on this recipe just because it doesn’t have vegan meat or cheese – it absolutely slaps. Super flavorful, fast and healthy! Most recipes I make from blogs take me at least double the amount of time listed, but this one is genuinely 20-30 min (I like to roast my veg for longer than suggested so that adds a bit of time too).

  2. These are so easy even I could make them. They were so great my friends wanted to know where I got takeout from. I highly recommend to everyone that wants to make a delicious, easy, 30 minute fajita feast!!

  3. These were serving! So good and easy. And makes great leftovers!
    But am I the only one that thinks they are way too spicy?!
    Next time I will cut the chipotle chili powder in half!
