And while they may seem a little fancy, they require just a few ingredients and less than an hour to prepare … making for a decadent treat the whole family is sure to love!

My Savory Vegan Cajun Chick’n Hand Pies requires just a few ingredients that you may already have in your fridge and pantry! Here’s what you’ll need:

  • Puff pastry
  • Vegan Chick’n (vegan sausage works great, too!)
  • Vegan cheese
  • Bell pepper
  • Onion
  • Vegan butter
  • Cajun seasoning

As I mentioned, these Savory Vegan Cajun Chick’n Hand Pies are super easy to prepare! They make for a fun little appetizer, or a full meal! If you have kids, this is a good way to get them in the kitchen to help prep food … I think they’d have fun scoring the pastries once they’re formed! Here’s how to make ’em:

  1. Make the filling. Caramelize your onions and peppers. Once they’re ready, set them aside. In the same pan, cook up your vegan chicken and season it with your favorite cajun seasoning blend! Reduce the heat to low, add the cheese and mix until the residual heat gets most of the cheese nice and melty with the chicken. Add the onions and peppers back in, toss to combine, taste and adjust seasonings, and remove from the heat.
  2. Roll out the dough. Roll out the puff pastry just a bit larger than its original size.
  3. Cut the dough. After you’ve rolled out the puff pastry a bit, cut each sheet into 9 even squares (you should have 18 squares total).
  4. Fill! Once you’ve got all your squares cut, time to fill them! Fill half of the squares in the middle with about 2 tablespoons of the filling, making sure to leave room at the edges to seal them properly. Then, place another square on top.
  5. Seal! Once the puff pastry squares are filled and topped with the other half of the squares, seal them using the back of a fork.
  6. Brush and bake! Brush the tops of your savory pastries with a bit more vegan butter, then bake them on a parchement paper lined baking tray at 375° F for 20 minutes. Top with more vegan cheddar cheese (optional), and then bake until golden brown and crispy, about another 6-10 minutes.
  7. Eat! The best part! I like to serve my Savory Vegan Cajun Chick’n Hand Pies with a dash of my favorite hot sauce!

Ingredients
  • 5 TBS vegan butter, divided
  • 1 small white or yellow onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • ½ tsp kosher salt
  • 6 oz vegan chicken strips
  • 1 tsp cajun seasoning, such as Slap Ya Mama or Tony Chachere's
  • 5 oz vegan mozzarella, about 1¼ cup
  • 2 oz vegan cheddar, about ½ cup + more for topping
  • 1 box puff pastry sheets, defrosted (2 sheets total)
  • Fresh parsley, for serving
  • Hot sauce, for serving
Instructions
  1. In a skillet, melt 2 tablespoons vegan butter on medium heat. Add onions and peppers, and sprinkle with kosher salt, cover, and cook until they're nice and caramelized, about 10-15 minutes, stirring every 3-4 minutes. Remove from the pan and set aside.
  2. In the same pan on medium heat, add 2 more tablespoons butter. Once the butter is melted, add vegan chicken and cajun seasoning, breaking up the chicken with the back of a wooden spoon into small bit-size pieces. Cook until it is heated through and slightly charred on the edges, about 8-10 minutes.
  3. Reduce the heat to low and add both vegan cheeses, mixing to combine. Continue to mix and let the residual heat melt the cheese into the chicken pieces. Turn off the heat and add the onions and peppers back into the pan. Mix to combine.
  4. On a clean, lightly floured surface, carefully roll out both sheets of puff pastry by just a couple inches. Cut each sheet into 9 even squares (this should give you 18 squares total).
  5. Once you've got all your squares cut, fill half of the squares in the middle with about 2 tablespoons of the cheesy chicken filling, making sure to leave room at the edges to seal them properly. Then, place another square on top. Seal each square on all edges with the back of a fork. Place all the sealed puff squares onto a parchment paper lined baking tray.
  6. Brush the tops of your savory pastries with a bit more vegan butter, then bake them on a parchment paper lined baking tray at 375° F for 20 minutes. Top with more vegan cheddar cheese (optional), and then bake until golden brown and crispy, about another 6-10 minutes.
  7. Serve with fresh chopped parsley and your favorite hot sauce.
  8. Enjoy!

  1. I can’t believe it, but I had everything to make half a batch of these hand pies (pastry sheets being the limiting factor). Usually I tend to not be satisfied with the taste that vegan chick’n products have, but everything worked deliciously in this recipe. I made mine with only one type of cheese (school night vegan’s mozzarella recipe). The taste was incredible. I look forward to trying out this filling in other pastry types. Top tier and better than a Hot Pocket!
