Ingredients
  

  • 1 teaspoon olive oil
  • 4 oz vegan sausage crumbles
  • ½ teaspoon Italian seasoning
  • 6 oz vegan mozzarella shreds
  • ½ cup marinara sauce, plus more for serving
  • 2 tablespoons fresh minced basil
  • Flour, for dusting
  • 16 oz 2 rolls vegan-friendly crescent roll sheets
  • 4 tablespoons vegan butter, melted
  • ½ cup shredded vegan parmesan cheese
  • Fresh flat leaf parsley, finely chopped, for garnish

Instructions
 

  • Heat the oil in a sauté pan over medium heat. Once the oil is hot, cook the vegan sausage according to package directions. Season the sausage with the Italian seasoning and continue to cook until heated through.
  • Transfer hot sausage crumbles to a large bowl. Toss with mozzarella shreds, marinara, and fresh basil. Mix well to combine. Taste and adjust seasonings, adding salt and pepper if you wish. Set aside.
  • Meanwhile, spray the ice cube tray with cooking oil. On a lightly floured surface, gently roll out each of the crescent roll sheets, careful not to separate the pieces of dough (if some are starting to separate at the pre-cut seams, use your fingers to gently pinch them back together).
  • Transfer one sheet of dough onto the ice cube try, ensuring the entire tray is covered. Gently press the dough down into each of the ice tray holes. If any of the dough tears, use your fingers to gently pinch it back together.
  • Fill each hole with about 1 tablespoon of the sausage mixture. Cover the tray with the second sheet of crescent dough. Use a rolling pin or fork to seal the edges. Trim any excess dough from the edges and place in the freezer for 1 hour.
  • Preheat the oven to 375ºF (180ºC).
  • Flip the dough onto a parchment paper lined baking sheet. Cut and separate the bites.
  • Brush each roll with melted butter and sprinkle with parmesan cheese. Bake for 15 to 20 minutes, or until the dough is golden brown and crispy. I like to broil them on low for the last 5 to 6 minutes if they don’t look like they’re browning. (Note: the longer you keep them in the freezer, the longer they may need to bake).
  • Garnish with fresh minced parsley and serve immediately with marinara sauce. ENJOY!
