loaded fries : a real crowd pleaser
I don’t know about ya’ll, but when it comes to Super Bowl, the only thing I’m interested in, is the food. I could care less about the game, the commercials, or the half time show. Find me in the kitchen, drink in hand, grazing the spread like a horse in a pasture. With that being said, I’m a true believer that every party spread absolutely needs nachos. Now, you can make regular old nachos if you want, but if you wanna be the MVP of game-day eats, then you need to make my Loaded Chipotle Chick’n Fries … they’re so good, they’re worthy of a touchdown dance.
Grab a beer and let’s get to cookin’ the best damn Loaded Chipotle Chick’n Fries.
how to make loaded fries
This is a super simple recipe that requires less than an hour to prepare. Here’s how to make the best Loaded Chick’n Chipotle Fries:
- Waffle Cut Fries. You could honestly use any type of french fry in this recipe, but I find that waffle cut fries hold up the best, and have more surface area for all the delicious toppings. I season the fries with some cajun seasoning for added flavor. I bake mine about 5 minutes over the recommended time to ensure they are extra crispy! Because we are using two bags for this recipe, make sure you don’t overcrowd them. Bake each bag on a separate baking tray side by side in the oven.
- Cheese Sauce. Look, I’m not trying to break the mold with a vegan cheese sauce here. It’s simple and straight-forward, and because we’re trying to feed a huge crowd (many of which are probably meat and dairy eaters), I’m also not using typical vegan cheese sauce ingredients. No potatoes or carrots in this recipe. We’re preparing it much like you’d prepare a traditional cheese sauce – cheese shreds, non-dairy milk, vegan butter, and some seasonings. Blend that all up and heat it on the stove top to make the creamiest vegan cheese sauce you’ve ever had. Best part is NO ONE will know it’s vegan!!!
- Chipotle Crema. This stuff is so amazing, I could eat it by the spoonful! It’s definitely the star ingredient of these loaded fries!
- Chipotle Seasoned Chick’n. Season your vegan chicken with chipotle chili powder and a little salt pepper. Add to a very hot oiled skillet so it’s nice and blackened! So delicious! I like to use Gardein Chick’n Scallopini so the entire dish is gluten free, but if that’s not an issue for you or your guests, feel free to use your favorite brand of vegan chicken strips!
- The Fixin’s. Some people like to keep their nachos simple, with just a few toppings. I am not some people. I like variety. My favorite thing about these Loaded Chick’n Chipotle Fries is that each bite is a different explosion of flavors!

XOXO!
- 2 cups vegan cheddar shreds
- 1 - 1½ cups unsweetened non-dairy milk, separated
- 3 TBS nutritional yeast
- 2 TBS vegan butter
- 2 tsp cajun seasoning
- ½ tsp salt and pepper, plus more to taste
- 8 oz vegan sour cream, room temperature
- ¼ cup os the sauce in the can of chipotles in adobo sauce
- ¼ cup unsweetened non-dairy milk
- 2 tsp garlic powder
- Juice of 1 lemon
- Salt and pepper to taste
- 2 - 20 oz bag waffle cut fries
- 2 tsp cajun seasoning
- 1 TBS avocado oil
- 1 - 10 oz bag vegan chick'n strips
- 2 tsp chipotle chili pepper seasoning
- ½ tsp salt and pepper
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained and rinsed
- 1 cup diced tomatoes
- 1 cup pickled jalapenos, drained
- 1 small red onion, diced
- 2 large avocados, diced
- Fresh chopped cilantro, for serving
- Preheat oven to 425 degrees.
- Season fries with cajun seasoning and bake both bags on separate baking sheets according to package directions. While the fries are in the oven, prepare cheese sauce and chipotle crema.
- In a blender, combine all the ingredients, starting with only 1 cup of non-dairy milk. Blend until completely smooth. The consistency should resemble that of regular nacho cheese sauce. If it is too thick, add more non-dairy milk 2 tablespoons at a time. Taste and adjust seasonings. Transfer cheese sauce to a saucepan on medium-low heat. Heat until warmed through, whisking occasionally, during the time the fries are in the oven.
- Whisk all the ingredients besides the salt and pepper in bowl until completely smooth. Taste and adjust seasonings, adding salt and pepper if you'd like. Set Aside.
- Season vegan chick'n with chipotle chili pepper seasoning, salt and pepper. In a large pan on medium-high heat, add avocado oil. Once the oil is hot, add the chick'n strips and cook until completely warmed through and slightly blackened, about 7-10 minutes. Slice into bite size pieces and set aside.
- Once the fries are done baking, transfer them a large party plater in an even layer. If you have to do more than one layer, add about ½ cup of vegan cheese in between each layer. Top fries with cheese sauce, chick'n, beans, corn, tomatoes, jalapenos, red onion, and avocado. Finish with chipotle crema and fresh cilantro. ENJOY!
