Ingredients & Substitutions
- Avocado Oil: it has a high smoke point, making it ideal for high-heat cooking. If you don’t have avocado oil, you can substitute with vegetable oil or any other high-heat oil.
- Vegan Sausage: you can use any brand of vegan sausage that you prefer, links or grounds are fine! I love using Beyond Meat or Impossible. You can also sub the vegan sausage with chopped mushrooms or other plant-based protein sources.
- Veggies and Aromatics: onions, peppers, tomatoes, garlic, parsley, and green onion.
- All-Purpose Flour: this is used to thicken the sauce. You can substitute with cornstarch or arrowroot powder for a gluten-free version.
- Vegetable Broth: used to cook the pasta and create the base for the sauce. You can use homemade vegetable broth or store-bought, low-sodium vegetable broth.
- Unsweetened and Unflavored Non-Dairy Milk: adds creaminess to the sauce. You can use any type of non-dairy milk that you prefer, such as almond milk, oat milk, or soy milk.
- Short Pasta Noodles: I’m using these corkscrew celletani noodles – I think they’re perfect for get all that creamy sauce in all the nooks and crannies! But you can use any type of short pasta noodles that you prefer, such as penne, fusilli, or rigatoni.
- Nutritional Yeast: adds a cheesy, umami flavor to the sauce. You can purchase nutritional yeast at health food stores, such as Sprouts or Whole Foods, or on Amazon.
- Vegan Parmesan Cheese: also added for a cheesy flavor and garnish. You can purchase vegan parmesan cheese at health food stores or online, or make your own by combining ground cashews or almonds, nutritional yeast, garlic powder, and salt.
Step-by-Step Instructions
1. Cook the Sausage:
Heat the oil in a large pot or Dutch oven over medium-high heat. Once the oil is melted, add the vegan sausage. Cook, stirring or flipping occasionally, until the sausage is heated through and starts to crisp on the edges, 4 to 5 minutes. Remove the sausage from the pan and set aside.
2. Sauté the Veggies and Aromatics:
In the same pot, add the onion, bell peppers, and tomatoes. Cook, stirring occasionally, until most the onions become translucent, and the peppers and tomatoes are tender, 6 to 8 minutes. Add the garlic and cook another 1 to 2 minutes. Sprinkle the mixture with the flour and mix well, making sure there are no clumps.
3. The Noodles Join the Party:
Slowly pour in the broth and milk, stirring to ensure there are no clumps. Add the pasta and parsley. Season with the cajun seasoning and nutritional yeast; stir well. Increase the heat to high and bring to a boil. Reduce the heat to low, cover, and simmer until the noodles are tender, 12 to 15 minutes.
4. Stir in the Parmesan:
Remove the lid, stir in the vegan parmesan, and continue to stir until it’s melted throughout. Taste and adjust seasonings, adding salt and pepper, if necessary. Let the pasta cool about 5 minutes before serving.
5. Garnish, Serve, and Enjoy!
Garnish with green onion and a sprinkle of vegan parmesan, and enjoy!

Tips:

- 1- pound uncooked short pasta noodles
- ¼ cup fresh minced parsley
- 2 tablespoons Cajun seasoning
- 2 tablespoons nutritional yeast
- 1 cup vegan parmesan cheese plus more for garnish
- Kosher salt and black pepper to taste
- Thinly sliced green onion for garnish, optional

I have tested this with Field Roast Garlic Fennel sausages, Beyond Sausage Hot Italian, & Tofurkey Italian sausages. While all three were good, Beyond is the most delicious.
