Ingredients
  

  • 1 pound uncooked pasta noodles
  • 3 tablespoons good quality olive oil
  • 1 cup diced white onion
  • 6 cloves fresh minced garlic
  • 1 tablespoon red pepper flakes, plus more for garnish
  • 2 teaspoons Italian seasoning
  • 1 teaspoon granulated sugar, optional
  • 1 teaspoon kosher salt, plus more to taste
  • 6 ounces good quality tomato paste
  • 3 ounces vodka
  • 1 ¼ cup plant-based heavy cream or extra creamy non-dairy milk
  • ¾ cup vegan parmesan, plus more for garnish
  • 2 tablespoons vegan butter
  • Fresh minced basil, for garnish, optional

Instructions
 

  • Cook the pasta in boiling water until al dente, according to the directions. Before draining, reserve 1 cup of the pasta water. Drain and set aside.
  • Meanwhile, heat the olive oil in a large sauté pan over medium heat. Once the oil is hot, add the onion and garlic, and season with the red pepper flakes, Italian seasoning, sugar, and salt. Sauté, stirring often, until the onion is translucent, 3 to 5 minutes.
  • Move the onions and garlic to side of the pan and add the tomato paste to the middle of the pan. Cook, stirring often, until the tomato paste turns dark red and begins to slightly caramelize, 3 to 5 minutes.
  • Combine the onions and garlic with the tomato paste and pour in the vodka. Cook until the vodka evaporates, 1 to 2 minutes.
  • Whisk in the heavy cream until combined and simmer for 3 to 5 minutes.
  • Stir in ½ cup of the reserved pasta water, parmesan, and butter, mixing until the parmesan and butter are melted and the sauce is smooth and creamy. If you think the sauce is too thick, add 1 to 2 tablespoons of the pasta water at a time, until you reach your desired consistency (I usually only use ½ cup of the reserved pasta water).
  • Toss in the cooked pasta and mix to combine. Taste and adjust seasonings, if necessary. Serve immediately with red pepper flakes, parmesan, and fresh basil and enjoy!
